How can a create more rate tables

Hello,

Is it possible to create more than one postage rate table? We are selling different quantities and we need to create a different postage rate table for each category.  Is it possible to do this? As by now there is only one that is saved which is always the last one we created but it applies automatically to all categories, which is wrong.
