A buyer that has payed wants me to put his order on hold and not ship it untill November 23 (since he is away from home).
But..
If I dont ship it within 3 days I will get "Delayed".
What can I do? I cant find any info on how to hold an order.

I tell the buyer that I have a commitment date for shipping that Ebay holds me to and NOT shipping by then affects my Ebay account and standing.
It is up to the buyer to have their mail held at the post office while they are away (USPS does this for free)
If they can't have their mail held, you can cancel the order and they can purchase it again when they want it sent.
Not sure why buyers do this sometimes!

Just don't mail it until the date the buyer has asked, one late shipment is not going to hurt at all. In fact, I don't think it is even an automatic defect unless the buyer checks off that it was late.

I had this happened before and I held it as long as I can but did print label before the final specified ship date. I then held dropping it off for another 3 days. It all worked out fine. I do think ebay do look at ship status. Ebay does not have any hold order thing. This was the best I could do on my end with what I had to work with.
There are crooked sellers who print label and do not even drop package off for over a week. I have run into a few of those.
What we are doing is for Buyer benefits are different not lie these Sellers who do it because they are simply lazy and unethical.
