I sold two heavy items to the same buyer. On the first item he purchased it at the listed price. I have immediate pay selected so he paid for the first item. The second item he made an offer. I accepted the offer and asked him to hold off on payment until I could give him an invoice with shipping. He apparently didn't read my message and paid for the second item as well. He selected Parcel Select as his shipping choice. Parcel Select is going to be approximately twice as much as FedEx Home Delivery. I told him about the price difference and he requested the cheaper option. Since he has chosen Parcel Select eBay will not allow me to change the shipping method. Is there a means of doing so short of cancelling the transactions and starting over?

You can ship via any method you wish as long as it meets or beats the delivery estimate. the carrier services the buyer's address, and you find some way to upload the same tracking number to all items in the combined shipment.

You can purchase and print the shipping label in Paypal for your customer.
As long as you have the change in carrier agreed to in messages I would think you'd be ok. If you are doing a partial refund in paypal for difference in delivery then be sure to mention said agreement on the refund notes.
