Handling Time is Inaccurate

I have a store and I changed my handling time to 3 days I sell hand made items and shipping by the next day was becoming impossible given increased sales). We have verified all listings have this handling time applied to them. However, virtually every sale says to ship by the next day. Every once in a while, it gives the proper handling time (there is no pattern in listing or time of day, completely random) but 99% of the time it is wrong and says ship next day. We reported this to ebay a month ago and they are baffled, they told him to ship within his 3 days and to just call back to have the late shipping defects fixed while they forward the problem to the technical team. We called yesterday to ask them to fix the defects and they initially refused. The reps who claimed they put a note about it in the system apparently failed to do so. Including this in here to let people know to beware that they don't keep their word. Eventually I got a different rep to agree it should be fixed. Anyways, I've searched everywhere to see if others are having issues like this and have come up mostly empty. Does anyone have any tips on how to fix this? Every new order is getting a late shipment defect because ebay refuses to fix their broken system.

This is a legitimate issue. Our items were posted with a 10 Day handling. Two items sold and all show 5. I work and cannot ship them until 6 at the least. eBay needs to fix this & remove any defects in the process.
