I need to add a few more shipping countries to my currently active listing.Is it possible to edit it?Will doing so affect my ebay account?

you can add more countries you can use exclude country or shipping rate table as well  but i think its not good to change country location when you editing

Yes, you can edit, or as they say here, “revise” your listing.
