I recently sold a few items on eBay, but I (the seller) requested a cancellation. Is there any way I can undo this?
I want to ship them out ASAP, but I don't know if I'll be out of my money if the buyer clicks "accept" and they get their money back as well as their item.

You either canceled the sale and refunded the money or you didn't. It's one or the other. The buyer doesn't have to approve a cancelation.

If the buyer paid and you canceled the order, then the buyer was refunded.
So you shouldn't ship anything.

Your New. You need to communicate. With the buyers. eBay and Paypal. Normally on a new seller Paypal will put a 21 day hold on the items. If you canceled it they may have gone ahead and refunded the customers. Contact PayPal or the collection service eBay is now using. Contact your customers and let them know what is going on. Even if you made a mistake a simple " I am sorry" goes a long ways.
If you canceled the sale you may have to have the customers repurchase the items. But their is a lot of different scenerios so you should contact eBay and ask them.
But do contact your customer and let them know what is going on.
