Customer paid for an item. I shipped the item. I noticed no updates were made to the tracking of that shipment on Ebay. I sent a note to the purchaser and she verfied she received the item and left feedback. How can I get this corrected to show shipped and received?

How did you ship it? Via USPS? You have to call to shipper and ask to update, but I really dont think they gonna do it. Sometimes there is an info: transfered to delivery agent and no update after or it's forever out for delivery because postman didnt scan the tracking number.
You have a nice customer who told you that she got the item so you have nothing to worry about.
You can call USPS or Fedex or whoever but you need to have much time to spend two hours and wait someone to answer. And probably they wont do anything.
