Ideally, 24 hours/next day (or same day), and this is mandatory if you want top rated seller status (to some TRS is important, for some it is not important.) At any rate, it helps assure buyers when things go out promptly.

When I first came to E-bay about one year ago I didn't know if I would have any luck selling. After all I had placed an ad in a Trains magazine for $70.00 for all the railroadania I had available. I got 8 request's for what I had and no sales.
So I listed a 3 day handling time figuring if I sold anything I would have time to run to the store, buy the boxes and such and ship them.
After receiving my first order a week later, I shipped everything the same day as the order is received if the post office is open. Otherwise, I go as soon as possible the next day.
Now everything is listed with a two day window.
Hope this helps.

It depends on you & your ability to get items shipped. I offer 1 day handling on all my listings because I am able to get sold items packed & shipped in that time frame.
I think buyers like when tracking shows their item tracking as shown "received" by the shipper the next day as opposed to several days later, IMO.
