I don't even get an option for first class when I try to ship the item. What is going on?

Buyers are also now only paying the discounted ebay rate instead of the full rate. Again what is going on?

All of your listings show Standard Shipping (First Class) so when you pay for a label you will purchase Ground advantage because USPS discontinued First Class package
Check your Shipping preferences to see if eBay opted you into discounted shipping, you can opt out if this is what occurred.

Just a quick glance at your "Sold" for this account
Nothing I see would qualify for First Class Envelope....
USPS no longer offers that option for parcels or "non-machinable' shipping
...as far as rates,,,
you need to "option" on your preferences page....

The buyer did not change anything @she-s1l2eqo . Your listing 395259906223 offered First Class Large Envelope, an untracked service for which your strap does not meet the physical requirements, as the only shipping option. That was an error on your part in offering the wrong service on the listing. Mistakes happen - we're all human. Just pay for the Ground Advantage label and check your active listings to make sure none of them have the wrong service.
I did a quick skim and found the same problem with this listing: 395533336610 and this one 395533333122
As for discounted rates, there was an email that went out circa April 15 for a change that took effect May 15 - if you ignored that email then you did not opt out when eBay told you they were changing your setting to offer buyers carrier discounts. As mentioned above, you can switch it back to retail rates on your shipping preferences page.

Over a year ago, USPS eliminated First Class package service and merged it into a new category called Ground Advantage. So that's what you have to use; but it's basically the same service. You need to update your listings so the name of the service is correct; but the prices shown in most of your listings are the correct Ground Advantage prices.
If you want to charge buyers the retail rate rather than the discounted eBay postage rate, just update your site preferences here:
