I've been aware of this problem, and yet I still just printed out a label for something not yet paid for.
Do I leave it hoping they'll pay and then lose out on a refund when the item isn't paid?
Do I void it? confusing everyone and tying up my money?
The buyer has now gotten a your item shipped email and it is shown as shipped on their end? right? making it less likely they'll think they still have to pay for it?
I'm so ticked right now. I an beyond frustrated at having to navigate around this garbage that eBay should fix!

I have done this too. As I recall there may be a red or orange small typeface warning across the top of the screen, but it in no way jumps out at you. I'd sit tight through tomorrow (a postal holiday) hoping the person will pay, and cancel it Tuesday.

I’m sorry but why is it eBay’s responsibility to deal with your lack of attention.
This is what I see if I try to print a label for something which has not been paid for.
Additionally, on my sold items page there is a $ that shows up when something is paid for. No $ = no payment.

You wouldn't have this problem if you weren't trying to work from your SOLD screen. Instead, go to your Items To Be Shipped page (or whatever it's called) of if you're using the Seller Hub, in the OVERVIEW page, top left it says TASKS. That will include what's paid for and awaiting shipment, what's awaiting refunds, etc.
Alternately, look at the box to the right of TASKS where it says ORDERS. A couple items down is a header that says AWAITING SHIPMENT PRINT SHIPPING LABEL.
Stay of your SOLD page and your ALL ORDERS page. That will prevent you from making this mistake.
eBay set up these different screens to help with workflow - but if sellers don't use them and instead stick to the summary type screens they are apt to get into trouble.

So why have a big giant bolded button there?

So that WHEN you need it you can find it. Or are you the kind of person who insists on touching any surface that says "wet paint".
Until you are ready to use it, DON'T TOUCH IT.

I like it just the way it is. I use that for the ultimate shipping calculator when I have something listed as a flat rate standard service parcel. I can compare between fedex and usps to see what is the best way to ship it before the buyer pays. I will even play with dimensions by an inch or two to see if it is worth trying to make a smaller package.
