Send invoices but later on I check and there's no acknowledgement of invoice having been sent. Send it again, go back and check and "send invoice" is still there by item. Don't know if buyer is receiving them or not

I don't believe that the send invoice words change. Did you check the little box that says that you will get a copy?

Tick the box to send a copy to yourself.
Just in case, unless you are sending a combined invoice for multiple items AND adjusting the shipping charge there is no need to send an invoice, it will infact delay the time at which you can cancel for non- payment.
If you are combining then send the invoice, if not then don't send invoices, if you want to send a reminder then just send a regular message instead of an invoice.

Hi; before after sending an invoice selling page would state buyer has been sent an invoice. I know eBay sends one too, but I like the personal touch

Another reason not to send invoices (may not matter for you because you are using flat rate shipping) is that it locks in the shipping charge. If you used calculated shipping this can be a problem because buyers can change their shipping address to a more distant zone.
Have to ask, why are you offering Media Mail for your Matchbox toys and other things that do not qualify?
At some point USPS will catch you and this will cause problems for you with both buyers (order arrive postage due) or USPS (they start to scrutinize your shipments).
One day USPS will eliminate Media Mail and they will use "abuse" as one of the major reasons.
