I see a bunch of sellers having a dropdown menu where you can choose a video game and each one has its own price. How do I create a listing like that?

By creating a variation listing.

Click the arrow beside the category name to see which sub-categories are permitted.

So is this saying that actual whole video games are not allowed to be sold this way. But if I broke my games up into thier parts then I could list them this way?
I'm assuming loose disc are not acceptable this way either though.
I sell video games, I like the idea of using these to move stock of Games that don't fit my store, but I don't want to risk suspension over that.

Whether it's allowed or not. Ask yourself if it gives a good experience for the buyer. Outside of maybe clothes or something where you have colors or sizes. I hate looking at variation listings. They always seem to become a cluttered mess. Out of order because the seller did a **bleep** poor job thinking about that. So you have to hunt for what you're looking for. Or already sold and still pops up because the seller doesn't clean up the list from time to time. So even if you find the thing, you can't even buy it.
They have their place, but you'd probably be better off doing a listing for each game. But there are probably those that love variation listings.

Our grandeous plan was this.
I would put low sell though titles on a variation listing at base price, where every week I would place a 25% off sale on the items, so it would work like this
Week 1 : reg price
Week 2: 25% off
Week 3: 50% off
Week 4: 75% off
Then the listing is taken down
All the items are sold in a wholesale action lot, with zero reserve. But buyer pays shipping.
If I'm going though the trouble of putting sales, I think I could manage deleting depleted items from the listing.
