Are you talking about the category?

If so, edit the listing and change the category.

If you pay for a store, you can set up categories to place your items in.   Other than that, I'm not sure what you are asking.

If you want to put your listings into categories (ie similar groups of items) you need a store.

As you're just starting out it wouldn't be financially viable or make sense for you to start paying for a store yet.

Once you are going to have more than 250 listings then you can get a store and sort them all into your store categories.

Just be aware that the lowest level - a starter store, only gives you the same # of free listings (250) as not having a store.
