Hi, I purchased a postage label and included £1 insurance. The item was posted on 7th December 1st class but the buyer hasnt received it, I'm not sure what to do next, any advise would be appreciated, thanks.

That depends upon how you were notified that them had not been received and whether you have delivery confirmation or not.
Did your buyer message you, or file a dispute?
Is there delivery confirmation from the postal service, or not?

The Royal Mail has been having labour difficulties and staff have been staging announced walkouts since December.
In terms of eBay, what dates was the buyer given as a delivery window?
If the window has closed, the buyer can open a Not Received claim. Don't encourage him to do that, but if he does, your best path would be to refund promptly.
When tracking does show delivery, you can send a polite note and invoice for the item he now has. Some sellers will reduce the cost by the value of the shipping charge. It works as often as not.
