Assuming you succeed in removing the authenticity guarantee, the buyer can still file a Money Back Guarantee claim and get a FULL refund if the item is not authentic. There is no protection for sales of counterfeit items on Ebay.

If it's not authentic, your not allowed to sell knockoffs / fakes.

The only way to remove the authenticity guarantee it to make it it doesn't qualify. In most cases that means lower the price to a level below the amount where it is automatically included.
For example your 14k Diamond listing at $1750, if you drop the price to below $500 the Authenticity Guarantee goes away.
I have a feeling you are not wanting to do that!
Study the info here to see what qualifies and remember if it qualifies (price, brand etc) then the AG will apply.
