So if I manually end my listings before the 30 days expire ebay can't charge me anything correct?

This is going to be a pain to keep track of if this is the case.

I let a listing 30GTC run till the end it automatically relists, correct?

I end a listing on day 29 manually, it goes into my ended listings file and does not get relisted
until I do it myself. Correct?

exactly, and you can end it anytime before the relist, even moments or seconds.
