I have a list of sales awaiting feedback, but they are from sales that never got paid.

I reported the buyer, but feedback list remains and I want to delete it (them).

How?

You can't delete but they will drop off the list once the time window for leaving feedback has passed. I think it's 45 days. This is annoying but it has been like that for years and I suspect it will always be like that.

I've noticed a change as of late. I'm not prompted to leave feedback until after the item is shipped.

There is a drop down box next to "Leave Feedback" on my list of transactions awaiting feedback.  At the very bottom of that list (have to scroll) is "Archive".   I haven't used this yet, but will if I have an unpaid item or cancellation to remove it from the list.

60 days here (Australia)

Actually it takes 60 days to time out.  Just ignore them.  Feedback is voluntary not a requirement, and you can ignore the notices from eBay as well.
