I have a buyer waiting for some other items of mine to end. They won an item about 5 days ago. Buyer contacted me to let me know he was watching other items and hopes to win so he can get it all at once. Yesterday eBay cancelled the order because he hadn’t paid yet . This is the second time this happened against my consent. How do I let buyers have more time to pay for an item they won without eBay cancelling the order after 4-5 days?

you gave them consent......

so you can control the auto communications for unpaid
remember though, you will have to monitor "real" unpaid items manually

It's on your Unpaid Purchases page for automatically closing Unpaid items (i.e. so you don't have to do it manually): https://www.ebay.com/Cancel/Preference/UnpaidPurchase
There is also an exception list maintained on that page if you want to exclude buyers whom you're allowing to pay late.
