I just listed my first few items on here and the payment options say "e-bay handles all Payments' or something like that. So.....i sell my first item, finally figure out that i need to send an invoice (just happened to stumble on that) and then I see something like communication with the buyer about forms of payment???!!! I thought that was out of my hands???!!! The most un-user friendly site i have EVER used. Thoughts, suggestions? I still have no idea if an invoice was sent or how im getting my money so its probably all a bust

Sellers don't need to send an invoice. Ebay automatically sends them when a purchase is made.
It tells the buyer which forms of payments are accepted on all listings so the buyer knows what methods of payment this site takes.
It is unfair to call this "most un-user friendly site i have EVER used". You made the decision to start listing without doing any research as to how to sell here on Ebay. Seems to me that the first thing you'd be researching on any site you wanted to list on is how you are going to get paid.
Have you signed up for Managed Payments? If you haven't, you will not be getting paid until you do that and you get verified.
Please review the below link carefully. It contains very important information as to how Ebay needs to see the information you provide them on your account. It is likely easier to change your Ebay account to match your bank account if you find there to be a difference.

If you haven't done this you need to give eBay your SSN and link a checking account for payouts. You also need to add a payment method for seller fees that aren't taken from your payouts.
Paying seller fees

Don't know where the error is in the payment method link.
Trying again

So you decided to begin selling on eBay without reading anything at all about selling on eBay?
And have labeled this the most user-unfriendly site you have ever used?
OK, then.

Sounds like someone trying to scam you. Legit buyers can just pay without contacting you.

"the payment options say "e-bay handles all Payments' or something like that."
Commerce is a serious activity. You have to be responsible to others and yourself. Money and business are regulated by rules and laws. To participate you have to read and understand what you are doing. No doubt you'll be back asking why you sold something for $40 and eBay only paid you $33.

I will add that you are a new seller listing items as auctions. They will sell, but the "high bidder" will most likely never pay. People with too much time on their hands spend their days placing bids on auctions new sellers post, with no intention of paying.
When you are starting out, it is best to list your items as But It Now, Immediate Payment Required. List the item at the lowest you want to get for it, + 15 or 20% to cover the eBay fee. The BIN will help to eliminate the game players.
Beanie Babies are going to be a hard sell.

I took a look at what you sold, and realized that you are selling a high-scam item. There's a good chance that your "buyer" was a sport bidder, or are trying to set you up for a scam. The price was not high enough to be a definite scam, but a lot higher than most beanie babies sell for these days. And, they are used to set up sellers for scams, so you have to be careful.
So, the issue here is not that the site is all that unfriendly, it's that you're being played by the buyer.
If you don't receive payment in your Seller Hub Payments, within 4 days, then you need to cancel the transaction for non-payment. eBay may do that automatically (if that is the default setting on your account) or you may need to do it yourself.

So you started selling without even knowing how you were going to get your money? First... new sellers are scam magnets and should not start with high end items. Second...go read everything about selling, payments, etc. before you go much further.

BTW, sellers who read all the information about selling on eBay do not "just stumble upon" anything. It's all easily/readily available for the seller's reading pleasure, preferably before he begins selling on what he deems is the most user-unfriendly site.
