Why when you have a item to sell that goes into auction, they don't give the seller a option to refuse the final bid when the bids are way to low???

No they are not.
Some one retracted a bid and it went down.
Advice to you is to use a fixed price, until you learn how auctions work. That goes for the Original poster as well.

eBay is lowering the price of the opening bid way lower then what I have put down. For example, I had a diamond ring starting price $1,000 in auction, they said it was sold to a buyer for $200!! How can that be when the starting auction price was $1000??

Did you have a Buy It Now price in the auction listing, that you weren't aware of?

Don't sell at auction if you don't have a tolerance for risk. Auction results can exceed your expectations but also sometimes fall short.
If sellers were allowed to end an auction because they didn't like the result, buyers would leave in droves.
And for posters who say start the biding at the lowest amount you are willing to take. I disagree,
The key to selling at auction is knowing your market. I start items all the time a 9.99, 29.99 etc that I know will sell for a few hundred dollars. I know the market for what I sell and have confidence in a result. Is it always the price I hope for, no. OTOH, some item sell for multiples of my estimate.
Auctions don't work for every item or category. Do your research, know your market, and maybe so af ew test sales via auction with lower priced items to get a better feel about how they work, how to write titles and descriptions, and market overall.

Are you talking about the ring that you started with $44?
Did you think you started it at 1K? You didn't.
When you set up a listing, just before you click to finalize it, you are shown EXACTLY all the details, including your starting price. Are you not checking that?
And, BTW, if I had bought that ring, shipping to me would have been $4.40.
Again, you probably need to stop listing until you have learned more about selling here.
Or, if you aren't willing to invest some time in educating yourself, maybe just take a break from eBay for awhile.

Your methods work for you, an experienced seller who obviously puts a lot of research and thought into your listings.
The OP is the exact opposite of that. Furthermore, he is willing to lay blame everywhere except where it belongs when he does not receive the figure he evidently had in mind in his head.

Yes, that is good advice and I will take that advice. I will put everything buy it now!! I have found out that eBay is lowering the starting price of auctions. I did start the auction at the starting price I wanted and eBay lowered the starting price of the auction. Example: I had a diamond ring for sale starting price of the auction was $1,000. I get a response back from eBay and a buyer that the ring sold for $200!! LOL 🙂 How can that be when the starting price of the auction was $1,000??
