I want to attempt to sell items off in a box of random items. I would name them and show pictures. What is that called?

With what you wrote it is not a mystery box. It is a "lot" of items in a single listing and is not called anything except a "lot".
Ebay does not allow mystery boxes. It is cheating buyers having to guess what they are buying.

I would argue that the return rate on mystery boxes would be roughly what they have become on normal items. 😁

Since you will name & show the items with photos its a Junk Draw Lot. A Mystery Box implies a mystery & the buyer not knowing what they are getting.
Junk draw lots are perfectly allowed. Mystery boxes I dont think are.

Depends on the Junk Draw Lot. Some sellers just dont want to take the time to list a bunch of usually cheaper smaller items. Or not worth listing singularly but as a lot can get the seller 20-30 dollars.
However if you are getting a bunch of 1-2 & even a few 5 dollar items for cheap its not bad for those resellers that sell at flea markets OR for collectors to get a bunch of items on the cheap.
