Seems like I am getting watchers even when my items are not even being viewed????

One can watch an item from the search results, without clicking to view the item.

Views also switched from 'All time' to 'rolling last 30 days'.   So it would be possible an item hasn't been viewed in the last 30 days, but had watchers from before that time.

Only if your listings roll over every 30 days.  Mine do not, I  relist an item (using sell similar)  2-6 weeks after it was manually ended on Day 30- yet I have watchers without views on half a dozen items.
