I've had a VeRO violation by a company that is NOT listed on the VeRO list. How I'm I suppose to keep from getting a VeRO ding when the list isn't accurate?

The list is continuously updated when companies make a claim. That a company is not on the list does not mean they won't make future claims.

Not all Vero companies choose to be listed

You can't go by the VeRO list to protect yourself.
It's not a requirement to be on the VeRO list to make a claim
and you are not added to the list if you do.
The ones you see their were voluntarily put there and it is by
no means a complete list.

The VERO list is accurate. You are just mistakenly assuming it is supposed to be complete. The VERO list is entirely voluntary. (I am a VERO member, and the music artists I represent are not on the list).
You also seem to be confused about what VERO is.
VERO is not some list of brands that you cannot sell. It is a system that allows any intellectual property owner to contest items that infringe their intellectual property rights. Any intellectual property owner - even people who are not members of VERO - can use VERO to report intellectual property infringement.

In other words, ANY item you sell - other than an item you made yourself - is subject to a VeRO claim at any time in the future with the end result being your account suspension.
In fact you are subject to a VeRO claim even if you made an item yourself because anyone (even a competitor) can claim you are selling a counterfeit and ALL your listings will be shut down until you can prove you are innocent. You are presumed guilty upon complaint without any proof.

Do they actually suspend an account for the first violation? I had not heard of that.

That's not necessarily true. For one thing, they don't end all of your listing when there is a counterfeit complaint...unless there has been more than a couple of violations. And they do not necessarily take action when a non Vero / non rights holder complains that an item is not authentic.
