I listed an item but unlisted it about a few weeks ago but when I search the item's name up in Google, it appears. Does anyone know when this will permenantely be deleted from the internet?

Probably never, I have stuff I sold 5 years ago but if you search the name it shows up in Google photos. Why would you worry about it being on the internet?

Nothing ever goes away. I also have an independent web site and, courtesy of Google's Spiders, my listings show up on Google. I am routinely getting questions from people asking about an item that they found it on Google search but has been long since sold out (and by "long" I mean sometimes a year or more).

once a listing / post is out there, it is pretty much for good!
Pinterest seems to copy every photo off eBay. Not sure how they get away with that!

I very briefly has an account with Pinterest. The way it works is that each account holder posts whatever photos they want along with an active link. In my case I was posting my own eBay photos and my independent site as well with the hope of generating click throughs back to eBay and/or my own site. Didn't generate enough click-throughs for the amount of work needed so I closed the account. But that, I suggest, is how the photos get there in the first place.

If the Google listings brings potential buyers to your Store, even if the particular item is long gone, that's a Feature, not a bug.
They won't find that thing, but they may find something else.
You should however, confirm that the item has not relisted without your knowledge. EBay has a glitch that relists Sold and Removed items, leading to disappointed customers and Out Of Stock Defects.
EBay will not admit this happens but it has been going on since I joined in 1995.
From time to time, at least monthly, put your listings in alpha-numerical order and check for duplications and relists.

I have seen photos(especially from Pinterest of which I have never had an account, but someone always seems to be "pinning" my items there) &/or old links to items that I sold many years ago, so yes many things remain on Google for an indefinite period of time...

Was it somebody else's denim jacket? Will you get busted for listing it?
The listing was completely vague in title, had only one photo, and it was listed in the art category. I don't see anybody being interested in looking it up unless it's related to this discussion topic you started, which is also gonna stick around on the internet.

The fact that you have used the phrase "permanently deleted from the internet" indicates that you have no idea what the internet is or how the internet works.
eBay controls whether and how long your content is visible on eBay.
Google controls whether and how long your content is visible on Google.
The Internet Archive whether and controls how long your content is visible on The Internet Archive.
I decide whether and how long your content is visible on my website.
Etc. Etc. Etc.
