If the doll you are referring to is the one shown below I do not see the doll you say sold on the 26th in your sold listings only the one you sold on the 28th although it does show you sold 2 of them.

2. How do I cancel the order without hurting my seller metrics?
Difficult situation, suggest talking with eBay first regarding the situation. At this point
the only valid reason you would have to cancel would be out of stock which is going to ding
your seller metrics.
3. Is it possible to speak with a live person at eBay for assistance?
Suggest contacting eBay through one of the social media sites.

I think @dbfolks166mt found the correct listing, because the purchase history for that one shows 2 sales, one on Nov 26 and one on Nov 28.

So it was the same listing, not a new one. I'm sorry, but this was seller error, you initially set this up with a quantity of 2, so it stayed active after the first sale.
Also, I noticed that the Buy It Now price for that listing has been revised almost every day since Nov 15 (twice on Nov 22), including on the day of the last sale, Nov 28. So you must have been able to view and access that listing, in order to revise it. https://www.ebay.com/rvh/145953408447?
I found a cached page dating from September, which shows "2 available".

Thanks for the supplemental information. Looking the OP's listings they have a number of odd caveats in their description. I have to wonder how many orders they have canceled and what reason(s) they have used to do so.

Looks like the OP copied silly terms from another seller that hadn't updated their listings in a couple of decades.
