Does anyone know of someone in West Palm Beach, Florida who might come to our home, photograph and list our many items for sale? Or we could theoretically drop them off nearby. Thank you.

Your best bet would be to find someone on Facebook or Craigslist. (locally)

If you are talking about somebody taking physical possession of the items and using their account to list and sell the items as well as handling all the logistics, returns, buyer issues and tax liability that may be difficult. Even if you do they are probably going to want a significant 50%+ percent of the eBay net profit to cover taxes and risk.
There have been a lot of posts like yours looking for consignors. I assume some of those are to potentially avoid the tax issues and the receipt of a 1099-K from eBay. You need to realize that the person you consign to would be required to issue you a 1099-K for any profits they disbursed to you so they are able to write that off of their own taxes.
If you are simply looking to unload a bunch of stuff and a quick turnaround you might try a local auction house or list everything as one big lot on a local forum as chevymontecarlo88 suggested.

If you let them list the items on your account and you be the one eBay reports the sales to the IRS then you might find someone that will work for you by the hour. Otherwise I know I wouldn't list for someone for a commission because I might spend my time photographing, researching, listing etc. and it goes unsold.
