I will be away and unable to ship anything for about a week starting on 7/5. Because of the weekend and July Fourth holiday, I scheduled time away beginning today so that I wouldn't need to package and ship on Monday when I will be busy preparing for my trip. I was under the impression that buyers could still see my listings but would also see a message informing them that there would be a delay in shipping. However, when viewing my store, the time away message is displayed, but none of my items are visible. Currently, these are all fixed price listings. Is this a glitch, or do I need to change something in my time off settings to allow items to be viewed during time away?

There is a box to check that says something in the nature of
"hide my listings" and was probably still checked- you will need to 'uncheck' it as you have no listings showing, in a store or outside a store.

I didn't find a hide my listings option, but did find that if I selected the option to allow purchases for the first 15 days during time away, my listings reappeared. Thanks!

Everything looks good on your items "time away." I did a "time away" in October-November and kept my store open. I sold around 90 items. I just sent all buyers a friendly reminder when I return to ship stuff out. A lot of buyers said have a nice 2 week vacation while on a cruise outside of the USA. And the day I returned I also got a lot of sales.

You just likely overlooked it as it is there.
Here's how to schedule your time away if needed:
