Hi! Long story short, I made a sale for an item (a somewhat high ticket collectible item) and while the buyer paid, I noticed that the account was created the day of the sale and of course has no feedback. Should I be concerned? I really don’t want to be (and can’t afford to be) scammed. Would like some input on this, thanks.

Sometimes it's a problem; Sometimes it's not.
People shopping see something they want bad enough to 'sign up' on ebay...after all, that's how the site gets new people.
Very much depends on the item to determine (some items WAY more purchased by scammers than other items).
The items you sell are loved by scammers...but again, there is really nothing you can do if the buyer paid. You must ship. You are not allowed to discriminate by age of account.

Like I always say, the time to worry about getting scammed is before listing and item, not after it's been sold.
Being a new account doesn't make it a suspicious buyer, new buyers sign up all the time.

I had such a one for a high ticket item.
I took a photo of package with postage on it at the post office and email the buyer their item has been mailed.
I kinda touch bases with the buyer...and crew it was a guest account.
I didn't leave feedback...no reason to.
And they as a guest can't leave feedback I believe.

Scammers target new sellers or anyone selling "high value items" (especially electronics). That being said...there is no way to determine "in advance" if you will be scammed. EBAY will NOT protect you if you get scammed.
Customer can use EBAY 30-Day Money Back Guarantee (supersedes "no returns" policy) to pull the old switcheroo. EBAY always rules in favor of the customer (even if they return a "box of rocks").
Also customer has 6-months AFTER they receive your item to try and "reverse payment" with their credit card company. If that happens...customer keeps BOTH your item and your money.

I have had those in the past & 2 recently, but i have never had a problem, sometimes it's someone looking for something but never had an account, but decide to open one so they can purchase the item, being a higher priced item would naturally bring some concern, My advice is send it with signature delivery confirmation, & insurance!

No.
Even if you were concerned or had a reason to be concerned the outcome is the outcome.
Your concern would do nothing to change it.
