Am I correct in the assumption that when you sell something and ship it.
Whatever shipping method/option chosen when shipping. Will be the same for the return?
My returns are set up Automatically Approved.
If I ship something UPS Next Day Air and the buyer returns the item, it comes back UPS Next Day Air?

No, that's not correct. eBay offers 2 options, provided weight/dimensions on the listing are compatible with the service:
1. USPS Ground Advantage return service
2. FedEx Ground return service

I should add:
When the seller is responsible for the return label:
If your original label was purchased through eBay, I believe you will pay the same rate for a return label, regardless of the service. Someone else may need to confirm as I'm not 100% on that. I buy most of my outbound labels off eBay and haven't tested that scenario in a while. An exception to that rule is when the outbound label is eBay Standard Envelope and return service will be a Ground Adv package rate.
If your original label was purchased off eBay, you'll be charged based on weight/dim in the listing and the return service - sort of. It's more nuanced than that, but it's the basic idea.
If the weight/dim on your listing exceed limits for return services offered, you'll be prompted to provide your own label purchased off-eBay, or make arrangements in another way (sending buyer funds, arranging freight pickup, whatever's applicable).
When the buyer is responsible for the return label:
Regardless of where the original label was purchased or what service was used, buyer will be charged based on weight/dim in the listing and return service (sort of - see above).

You seem to have a pretty good grasp on this.
I shipped an item, through eBay, UPS.
The shipping cost was $250 UPS. (too large for USPS) (FedEx showed $450)
So if it gets returned, I'll be paying FedEx $450 ?

My suggestion is to enable RMAs. When you enable RMAs you have the option of choosing between providing your own label or using an eBay label. https://www.ebay.com/rtn/Return/SellerRules
Having that flexibility also means you can do things like add signature or insurance or anything extra should you so desire (with an off-eBay label).
It also means if you can get a lower UPS rate through pirateship.com, you can buy a return label there and upload it to the return instead of being forced to use Fedex.
That said, if the outbound label was purchased through eBay @redlinear , the return label should cost the same as what you initially paid for the outbound label. If the weight/dimensions are within the FedEx limits for return service you'd pay $250 for a FedEx label.
I always see a variety of return costs with eBay labels because my outbound labels are mostly purchased off eBay.

are you aware that ebay will charge final value fees on the next day shipping cost despite a clear exemption, I do next day occasionally and they hit me every time.
next day shipping is risky,

My listings have free shipping. The sales price is the total, so I only get "feed" on the sales price.
I Don't ship next day or any expedited option for any reason or request.
Learned long ago that anybody that thinks they need something THAT fast, is probably making a mistake that's going to end up costing me more than item (car part) is worth.
BUT, until this post, I had always thought the Return was the same method this Initial shipping was.
Meaning if I shipped it NDA for big $$, the return would the same costing me double big $$.
So, everytime somebody requests that. I just told them
"Sorry, I cannot expedite shipments. eBay policies"
And, I still use that excuse, Nobody has ever questioned it.
