I’m going to start selling on Ebay. When I create a listing, what is the selling type I should choose as a new seller? auction or fixed price? May I know your experience? Thank you!

as a new seller from Sri Lanka, have you attended eBay Seller School/ the eBay Academy and fully acquainted yourself with the rules, policies,fee structure,etc.for selling on eBay? Have you learned HOW to be a seller?
Each and every seller's experiences will vary, will be different, so there is no sure fast way to know what will work or won't work for you...You will need to do your own research, your own testing, and learn from your own experiences, trial and error, same as the rest of us...

It's really about a personal choice - if you want to wait a week for the Auction to run or if you want your item to sell right away. I used Auction for years and then ran into problems with the buyer not paying and I was held up for another four days after after giving them a grace period. If you chose "Buy It Now", the buyer has to pay right away.

Auctions are for stuff you just want to get rid of. They might seem like a good way to move dead stockto make some cash, but it can 10-12 days to turn your items into cash if you have allowed Ebay to get their hooks into your bank account.
Auctins with reserve are fishing expeditions. I'm not a fan. A starting price is more honest.
Buy it Now listings are what I typically look for myself. When I purchase some items through ebay I usually need it now. Unfortunately after the shipping crash of 2020 in the USA many sellers have stopped shipping in a timely fashion. A big plus would (if you will/can actually do it) posting something like always ships by next business day.
Fixed price listings are basically retail listings. If you are competitive with similar products or you have a totally unique product this may be the listing for you.
I do not currenty sell on Ebay, but I have in the past. I may sell on ebay again in the future, but right now I am to busy selling elsewhere to safely deal with them.

You should how eBay works before you start selling again. It does NOT take 10-12 days to get your payout from eBay if you're set up for daily payouts. Do some reading.

If it's rather unique item use an auction. If there are 100 similar listed use BIN.

Not all items are suitable for sale at auction. Unless the item is of a unique nature that has an established collector following, fixed price is probably the best way to go.
Of course, the fact that you're located in Sri Lanka means that there are issues that you need to concern yourself with other than what you mentioned in your post. Make sure that you are registered with your government, have a legally acceptable way of receiving payment, have a selling account on eBay and wait until eBay informs you that you are approved to start listing.

I would look into what you cannot sell on eBay...A lot of people from your country sell teas and such. Tea is famous from your country.
I would look to see what others are selling or auctioning on. Some sellers have thousands of "buy it now" and a lot of that stuff just sits and no one buys it. Auctions will sell which means money coming in.
Also check into your shipping rates to see what size something is going to cost less.
For example, recent stamps of your country being shipped to buyers would cost not much and can usually forgo the customs thing. And it be only a stamp to mail them.
Just some ideas.

It depends on the item & your ultimate goal. Auctions tend to sell for less than fixed price.

How do you plan to be paid?
You will need a SriLankan business license and probably a Payoneer account.
Also:
Fixed Price/ Immediate Payment Required.
Returns accepted.
