Let's say that I have a monthly selling limit of $5000. Let's also say that I have $3000 left for this month. If I list something today with an opening "no reserve" bid of $2500, what happens if the eventual selling price of the item puts me over either of my existing monthly selling limits? In other words, over $3000 for the rest of this month, or $5000 next month? Do they cancel the auction automatically because the selling price exceeded the prior set level, or do they let the auction continue because the opening bid without reserve was $2500?

The auction will run its course regardless of ending bid.
If it's over your limits then you will not be able to list anything else 'til the next month. Listings will not auto-renew or auto-relist once you go over your limits so those would move to your ended listings page and you could post them the next month.

That limit is a LISTING limit. There is no limit to the amount of money a buyer can pay or bid on your item.
And why would a seller who's been here since 12/23/98 have a listing limit?

Ummm, could it be that maybe someone hacked into my account about 10 years ago and I didn't care enough or sell enough to do anything about getting it lifted?

If your item is selling, even if you aren't over the limit yet, request an increase in your limit. When I started my 2nd account to sell different items I got the low limit, but it was increased rapidly after the first month. I requested an additional increase when I was getting near and got it.
