I am new to using eBay and feel like everything I am listing on auction is just scam buyers that put in offers.
How do you weed them out and grow actual people bidding on items?

You are a new seller and a target for sports bidders and scammers.
You may consider refraining from using auctions style listings, DO NOT post best offers either, because that's also a scam magnet and list all your items at a fixed BUY IT NOW price with immediate payment required checked off. It's the only way to avoid these types. You'll get more serious buyers.

@samagr-7983 I agree with the response above. End all auctions, post as Buy it now with the immediate payment required box checked and don't enable the "allow best offer" feature. I would also post some low ticket items just to get some feedback. Your items are not cheap for a newbie and buyers may be apprehensive to purchase from a seller with 0 feedback. You could also buy a few small cheap things to get a few feedback points so you don't look brand new.

If the problem is scam buyers that put in offers, you could turn off offers and decline any offers that you do get.
