Same sold item appears in two pages

Why is it that when I sell an item (even if its the only one I have), eBay doesn't take it out of my Active list? The item appears in both the Active and Sold pages. This way, if someone else buys it, I will be in deep trouble. Come on, eBay! What's going on here?

In the Active Listings, does the Quantity display as 0 ?

If so, then you have opted into using the Out of Stock option, which comes in handy if you can replenish the items sometime in the future.  You can opt out of using the OOS option, so when I am sells, it is not shown in Active Listings or Unsold.

How do I opt out of the OOS option? And does that apply to all items of just individual ones?
