Don't.
Sorry, best advice I can give.
I would never send an item of that value via mail anywhere, let alone overseas.

IF, and I stress the 'IF', your buyer is an honest buyer and person, one that is NOT out to scam you, you can find a number of safe ways to ship, be it commercial shipping or courier. Not much different from selling an expensive watch domestically.
The warnings about shipping Internationally are mainly because expensive watches are a prime target of scammers and thieves. It is usually after the watch arrives that troubles generally begin, and the postal systems in some countries are in question for their honesty and reliability. And, as the ebay Money Back Guarantee and return policies are tilted to the 'buyer', the risk is not lessened.
Personally, with the chances of a scam, I wouldn't risk it.

I'm would be more worried about customs than I would be about a scam.

"What's the safest way to ship a $5000.00 watch to Europe?"
Deliver it yourself and only give it to the customer after you check their i.d.
and get a written in blood oath they are who they claim to be.
And then wait for the item not received claim.
