Hello, I sell expensive stuff - and got some 2-3 offers from zero feedback users. Every time that offers where very close to "buy it now", making nonsense sending it. For example 5k item offered for $4995. I have immediate payment requirement, so I am sure they can't pay (or not planning to pay) - that's why sending offers.
I not accepting it, it not hurt … Question, what they trying to achieve? Remove my listing temporary? Got my contact information? Some new scam? Any information will be appreciated

Sounds like a scam to me and it usually is with expensive items. You could make a choice not to send to anyone with zero feedback. If someone with zero feedback does buy research their address carefully. These scammers on eBay for a short time only wait 48 hours to ship and check to see if their account was closed at that point. They aim to steal your item for free.

Just stick to what you're doing: using the Immediate Payment Required option, and ignoring offers in messaging. They are indeed scammers who are not planning to actually pay you.

By accepting an offer, I believe Immediate Payment Required is removed from the listing. If it is an unsavory member making the offer, that allows further communication for them to try out some of the scams running here now...
If you choose to accept the offer, they may ask for your PayPal email address, or make some sort of complaint that they cannot pay due to something being wrong with check out, their gift card, etc. Just block and ignore and file the unpaid item dispute as soon as possible.
If your items sell, be aware that you may get ebay messages asking for you to ship to a different address. These are likely from a member that is not even your buyer.

Or since You have Immediate Payment Required Tell the Buyer You Just Adjusted the Buy It Now Price to $4995 and they Can Use Buy It Now... Bet they Won't Sounds Like a Scam to Me.

It is possible that they are trying to get around your IPR requirement. Having an IPR set doesn't apply to offers.

My comfort limit's about a hundred bucks, because, it's ebay.

Right. You can apply the Immediate Payment Required to a BuyItNow/Fixed Price purchase. You cannot apply it to a Make Offer or an auction. Therefore, in a case of a Fixed Price listing with Make Offer, the scammers will pursue the Make Offer path because they don't need real money to win the item that way.
I just guessing what kind of benefits they can possibly get "buying" and not paying (that mean getting unpaid item record).
It enables them to snatch the item off the market in order to try their various fake-payment scams on the seller without the risk of someone else actually buying it first. Offering almost the BuyItNow price is intended to tempt the seller into accepting without setting off alarm bells.
Maybe they can use my name or address to scam other people?
I don't see how. They're not getting your name or address anyway, unless you're listing a Local Pickup Only and giving out your address that way. Their goal is to scam you out of the item itself.
