A buyer opened a return request saying the item was not as described..But the item I sold was completely new and I told him how to assemble it. He could not figure it out so he opened the request and I have to pay shipping back.
Is there any way around me having to pay for the shipping back?
So can anyone just open a return request and say the item is defective when they simply don't like it just so they don't have to pay for the shipping back?

Did your buyer message you within eBay's messaging system? If so, what did he say? Did he say the item wasn't as described or something else? If so, what?

When the buyer opened the return request, he left the message "Item does not move as described. I would like to return it. Please send a return postage label, and I will ship it. "
Then I explained how to assemble it correctly and he responded
"My Mother tried- It does not move. It still is not working as it's suppose to"
THis was a gift for his mother and his mom says it's not working. But the item is brand new and not defective.

It does not matter. I had one that was new (and I had a number of these widgets) that the buyer could not figure out how to plug it in (There was one hole, you can't miss it, I kid you not). Not much you can do but accept the return. DO NOT ask eBay to step in.
These can be fought and won, I wrote about one back in Nov 2016 on how to so it on this id (if you click on my name, you can find it).
If you can get the buyer to admit in eBay messages that's it truly buyers remorse, you may have a chance. Good Luck.
