You can put fixed price items on Time Away. For auction items, you'd need to end the auctions early (if possible) or adjust your shipping time to give yourself extra days to mail what you sold.

Options include:
1. If your listings are all in auction format, just don't have any that will end at an inconvenient time. Be sure to allow for the 4-day payment grace period -- you should have no auctions that end less than 5 days before your departure, to be sure you can ship before you go.
2. Leave those listings up and take a seller performance hit for delayed shipping.
3. Leave the listings up and revise the handling time to cover your absence, so you can ship when you return without being considered late
4. End the listings 5 days before you go away, then re-list when you return
5. For fixed price listings, use the "Time away" option to leave your listings active and delay shipping time
6. For fixed price listings, use the "Time away" option to block sales while you're away so you don't have to worry about shipping. You can set the end time for the day you return, or whenever you feel you'll be able to once again stay on-time for shipping.

My own recommendation is option 4 -- so you don't have anything to worry about and you can relax and enjoy the vacation.

My vote is for #4
Buyers may not pay attention to a change in estimated shipping date. To many "I want it now" buyers.

You've gotten some good suggestions about using "Time Away" or extending your handling time or ending listings.
Here's another idea: Take items with you.
The circuit breaker panel might not be convenient to carry along with you, but some of the smaller things could fit into corners of your suitcases. Wouldn't it be nice to get some holiday cash while you're on holiday?
Of course, there are things you haven't said, like where you're going while you're out of town. (And you certainly do not need to divulge that info.) Obviously, if you are camping it would be more difficult to pack and send a sold item, but if you're staying in a hotel or with relatives, you might be able to.

Options #4 and 5 above. I use #5 anytime I'm going to be away. All of my stuff is Fixed Price. You can use that Time Away to your best advantage.

At the present time you only have auctions. If you are asking the question and continue to use auctions it is an easy answer. DO not list auctions while you are gone, or if you do, make sure they end at the time you return.

I list BINs, so I'd choose @nobody*s_perfect's #6. Since yours are all Auctions, I'd choose #4... and enjoy Christmas!
