Am I correct in thinking that the only way to offer a discount on a certain category of my items is to open up a store? I already have an account with my username. The first thing when opening a store is they want you to select a name for your store, but I want to leave it as the same name that I already have. When I pick my current username, ebay says error, somebody already has that name. So should I change my current username? Then go open up a store with my prefered username? (All this so I can create a discount for the category.) Basically, it seems to me that in order to offer a discount, Ebay wants me to at least pay the minimum five or six dollars per month to open up a store.

Correct - in order to run a sale event, whether category-specific or not, you need a store subscription @seaside_vintage_treasures .
You can pick any name for your store, but once you pick it the URL will not change. It will be ebay.com/STR/yourstorenamehere and even if you change the store name down the line the URL will remain the same. So choose carefully.
If you like your current ID but someone is already using it for their store, perhaps there's a similar variation that's available like Seaside Vintage or Seaside Treasures.
You do not have to change your userid to match your store name but you can if you want.
I have to ask: with 893 listings why do you not already subscribe to a Basic Store? You must be paying a heck of a lot in monthly insertion fees and you could drastically cut down that expense by paying for a store instead. Basic comes with 1K listings (plus additional in select categories).
Suggestion: Sign up for a monthly Basic store - try it for a month or two and see if you like it. If you do then you can always upgrade to annual. If you start with annual and find you don't like the store, there are early termination fees involved that don't apply to a monthly subscription.

If you use the same name for your store, leave out the underscores, so it reads Seaside Vintage Treasures.

You're welcome and just to demonstrate a bit about fees:
No store:
893 active listings
250 free insertions per month
balance 643 listings x $0.35 per listing insertion fee = $225.05
Basic store:
893 active listings
1,000 free insertions per month
monthly store fee $27.95 per month ($6 less if you do an annual subscription)
That's a savings of $197.10 per month with a monthly store ($203.10 with annual).
An extra $200 bucks a month in your pocket - you must be really happy you came here for advice @seaside_vintage_treasures . 😉
