Selling a small flat item (ticket stub), first class letter is not an option in that category. If I choose the untracked "large envelope" service, would I be wrong to ship it in a regular no. 10 envelope, since they are both untracked first class?

The "large envelope" service would be okay since you will be unable to create a shipping label through eBay for Untracked First Class.
Go to your Items Awaiting Shipment screen and click on the down arrow to the left of the transaction. Then select Mark as Shipped.

Why would you choose "large" envelope? eBay doesn't sell labels for First Class letters nor flats (AKA Large envelope). If you're going to mail as a letter, then it just doesn't make sense to say you're shipping as a flat/large envelope.
If "letter" isn't showing up as an option when you set up the shipping calculator for your listing, the reason is probably the dimensions that you entered; try 8 x 3 x 1 inch. Then you should see the option for "letter" and maybe even for "eBay Standard envelope" (if your item is under $20) which is a tracked service and which is available for some subcategories of ticket stubs. If that doesn't work, switch from calculated to flat-rate shipping and select generic "Standard" shipping.

NP, you are exactly right.
I'm new, and have been using eBay's recommended service, USPS Ground Advantage, which was OK for the higher priced stubs I was selling since I wanted tracking.
Now I'm selling the lower priced stubs and forgot to change the weight from four oz. (everything from 1 to 4 oz. is in the same Ground Advantage category) to the actual weight of one oz. Once I did, first class letter appeared as an option. Alas, standard envelope with tracking is still not an option in this category.
I was literally about to throw away a box 50+ years of sports ticket stubs I'd saved when I checked on eBay to find out people actually collect them. If I get stiffed because they're not tracked, no big deal for something I was going to discard anyway.

I assume that you mean that going forward you will select a different category since what you have currently listed is using Ground Advantage which you have to honor if that's what they pay for. I have shipped with First Class letter many times and @inhawaii is correct that there is no tracking with this and you take your chances. If USPS loses it you just have to refund (never happened yet to me). If you are just going to use a stamp or 2, what I do to simplify my listings is say "free shipping". And in my description I will say I am using First Class Letter with no tracking. Looks like you found a mini-treasure with those ticket stubs!

I might be wrong but I think if you use the 'ticket stubs' category instead of 'other memorabilia', you can use the ESE.

According to eBay, ticket stubs are still not permitted for use with the eBay Standard Envelope (ESE).
And either a #6 or #10 plain white envelope is okay for USPS First Class Letter.

I was using "Ticket Stubs" and ESE was not available. By switching to "Other Vintage Sports Memorabilia", ESE appeared as an option.
I've been on eBay since 1999 but have only done very occasional selling. Being laid up with a severely sprained ankle has put me in decluttering mode, getting rid of these tickets, and before that, a box of coins. I've learned more about shipping due to that than I ever thought I would, and I'm still learning.
