I've noticed this for some time now, but for a lot of my multi variation listings, the set default picture is different from the one that shows up in the search results. I post pictures for each variation and sometimes it chooses from those pictures at random. Is this a bug or feature? I wish it would just display the default picture. Or at least give me the option. I've attached a video of what I mean here:

I do not see this issue on my variation listings; however, I can replicate the issue with the listing you shared. I am going to tag another experienced seller who may be able to offer some insight.

eBay will show variation specific images in search sometimes. In my experience it's typically based on keyword triggers.
For example if you're looking for a cat t shirt and a variation listing has the same shirt available with different patterns: cat, dog, moose, blob fish - you may see the cat variation image in search results and when you click on it the cat variation will be selected by default.
That said, both @mcdougle4248 and myself were able to replicate those search results @goomb_24 with a random variation showing, and we did not use specific key words. To me it looks kind of buggy for a variation pic to show in that example.
I suggest clicking the ? icon on the bottom right of the search page to file a tech report, and include a link to this community post so eBay will see your video and comments from those of us that replicated your results.
