What do you think is the best ebay site to sell on?

USA ? UK? Ireland? Germany? Hong Kong?

What are your thoughts?

Since you are in Greece, I think you'd have better success selling to somewhere close to home. Shipping can be a nightmare depending what  you are selling. You have the option to list items for sale worldwide. 

I'd ask the UK boards, or maybe German boards for feedback.

I think your question is a bit like asking which vehicle is better - a bicycle or a dump truck.

Which vehicle is "best" depends largely upon what you are doing with it.

Likewise, which eBay site is "best" depends largely upon where you are, what you are selling, and who you are selling it to.

Where are your buyers?????

If most of your customers will be in Europe then listing on a Eurozone site might be best. If you expect a lot of US based customers then .com would probably be best.

As a general rule buyers in countries that do not have a local eBay site shop on either a site that offers their own currency (Euro) or on .com.

Also understand that if you offer your goods worldwide they can be found on any of eBay's sites although buyers may have to specifically select the "worldwide" box for item location to seed your items in a basic search.

You definitely DO NOT want to list on .hk or .sg because listings on those sites are completely blocked from appearing on any other eBay sites.
