So in constantly having to rearrange my office space, which is where all my items are, I've misplaced an item that sold, and I've turned this place upside down looking for it, and I have to upload the tracking before tomorrow night, I'm hoping I find it before I get off work tomorrow but if I don't, what should I do?
Should I just take the OOS defect? It would be my second, the first rolls off in October (was caused by eBay's system relisting a variation that had sold and eBay basically told me to shove it), it's my fault, I'm fully aware of that, but I'm not sure how to handle the situation, I want to be honest with my buyer that I misplaced the item, but those defects are gnarly, and my office area has seen a lot of activity lately that has caused some boxes to be spilled and items placed in different areas than before.
Advice?

Buyer messaged me back saying they don't care about the deadline if I find the part, and if I don't they completely understand.
That's a lot of pressure off my shoulders.

Welp I am happy to report that I found the part. It was in a box I had looked in 4 times already, but was kinda stuck in an opening to another smaller box that had a finger hole on the side of it.
I feel much much much better now.

I've suggested here before that sellers might want to box everything before listing it, so that at the instant it's paid for, all you need to do is write the address on it and put it in the mail. It seems a universally bad idea in these forums but at risk of causing another argument I propose you try that next time. 😄
I'm pretty poorly organized most of the time and this tactic has helped me in the past.

A lot of my larger items are prepacked and all they need is to be inspected and then have the invoice and packing list put in before shipping, but I have literally thousands of small items, a lot of which normally get bought one or two at a time, and I simply don't have the room to have 2000 SFRB's lining the walls.
It helps with the bigger stuff, but the smaller stuff usually gets put in labeled boxes, but my inventory got all messed up recently (as I explained in earlier posts) so I have to completely redo my system now, and that takes weeks, since I have other responsibilities as well.

Way to birddog that elusive item out. Congrats

I box 90% of my items as I list them... Clothing WAS stored in a cardboard box in a back bedroom closet (now in plastic tubs so the dog can't get to them)... Bracelets and cards are not pre packaged but are all housed together, in binders; binders in milk crates. Once boxed up ready for shipping I put them in numbered nanner boxes, I then copy the title of my listing to an excel file and then state what nanner box it's in. It DOES help for 'larger' items... but tiny things that weigh less than 1 oz, not so much.

I love that feeling when you find something you sold on ebay after searching and searching for it.

can you possibly order it from another seller here or elsewhere and have it drop-shipped?

That is a wonderful feeling. Even better feeling though is when you sell a small item and immediately think, "Oh bleep (yes, I actually wrote bleep), I can't remember seeing that for ages now that I think about it." Then you go to one of your storage areas, and that is the first thing you see after all.

You are too late to the game. The item was found just a few posts ago.

I already found the item in question, so it's a non-issue now, that having been said, I had already scoured the internet for it and due to the age and how long it's been discontinued I did not find any from any trustworthy sources.
A simple part number search revealed mine was the only one on eBay and they were non existent on the river.
