On the 'Manage Promotions' page, I can't find any way to end a sale I just started, only edit it. 'Delete' only pertains to ones already ended, if you just don't want to see them in your markdown history.

That's correct. You can prematurely end a markdown, but eBay will not let you end it less than 24 hours after it's been active.
So can schedule an early end date 24 hours from when it was created.
But, if you click edit you can remove all items from the sale except one. At least one item has to remain in the sale.
Keep in mind the listings you remove from the sale are still tied to that markdown, so they can't be placed on a new markdown until the current one ends.

Click edit then change the end time to now, or as close to now as it will allow (might be half hour gap).

PERFECT, that's exactly what I'll do.
That said, I think it's pretty cruddy that you can't just make your own decision to end the whole thing if you want. It's not like an offer or auction win or whatever, where a specific buyer thinks they have an agreement in place.
