I just tried creating a new listing from scratch with the updated listing format and it's absolutely terrible. They've gotten rid of the inline error checking and as a UX designer myself, there is absolutely NO WAY you could convince me anyone legitimately thought that was a genuinely good, helpful idea that would improve the system. It really feels like they're intentionally making it worse just because they can, because they know they're the only selling market with a large enough buyer base for most of us to have any real success, and they want to remind us how much power they have over us. I think I already know the answer so this is mostly just venting, but is there any way to get the old page back? I swear it takes me about twice as long now to create a new listing.

Is there any way to get the old listing page back?
Sorry there is no way back.

On the listing page, in the upper right, there are 3 dots.
Click them, if you can go back, the option will be there.

I have one glitch which I posted about, but outside of that, for basic listing I got the hang of the new form after about 5-6 listings. I can't speak for multi-variations, etc. - there may be something ugly behind door 3 in that case.
If this is like most of eBay's roll outs, it'll improve (albeit slowly) with time.

You can try this,
https://www.ebay.com/mys/overview
The links to various selling pages are on the left side under "Selling". I open each page (Sold, Active, Scheduled, etc.) in a new tab and just navigate between tabs. Works for me. Try it. You might like it.
BTW, I haven't used an eBay listing page in years. I just bring up a closed or current listing and use "Sell similar", editing the item to match the parameters of the new listing. No fiddling with constantly-changing eBay listing pages. The listing also gets a new item number and the "New listing" tag when posted. HTH.

Temporarily, at best. See below for details, with screenshot:
