I sold a shirt to a buyer and she messaged me she bought it for her daughter and said the shirt wouldn't go through her head, well that's a first I've heard something like that. I included in the description the dimensions of the shirt. It was a beer shirt so it couldn't be a childs shirt, now I'm not sure what to even say to her.

Buyer should submit claim through eBay. Nothing you can do at this moment.

I would tell the buyer to return it for a refund, then leave it up to the buyer.

You could check to see if she’s mixed up purchases (or daughter could be an adult) but, honestly, nothing good comes of trying to make a buyer keep something they don’t want.

I would tell her that the head goes through the hole in the middle, not the smaller holes on each side. In clothing industry terms the one in the middle is called the "head hole" (I think... clothing terms are pretty technical for us guys).
Aside from that, just tell her she can return it for a refund, or maybe exchange the daughter for one with a smaller head. You will need to determine whether you need to send the buyer a return label (for the shirt) or a bus ticket (for the daughter).

Maybe your Buyer did not realize that Landshark is a beer? The shirt is a neat graphic shirt.....Buyer might of missed the Premium Lager connection??
Your listing states that you do not accept returns. My guess is that it is a remorse return and the Buyer perhaps invented a reason to return it to you? Maybe it ran smaller than they thought?
If your Buyer files a SNAD, you will end up paying for the label to ship it back to you and refund the buyer in full for the item + their shipping.
What exactly does the Buyer wish for you to do? They are wanting to return it, correct?

I would go ahead and accept the return - it'll sell again. I had someone order a dress from me and they said they couldn't get it over their head to try it on. I took the dress back with refund and slipped it on myself. I have a normal adult sized head (7 1/4 hat size) and had no trouble getting that dress over my head. The dress sold again shortly thereafter to someone who could, indeed, get it over their head.
Perhaps the daughter has a gigantic head.
ETA: That's pretty tiny for a women's medium - 28" bust? I wear a medium and they're about 36-37" bust. If the head hole is proportionate, maybe the daughter really CAN'T pull it on. I once purchased a cycling jersey in a large which had the tiniest head hole imaginable.

The head opening looks very tiny in the picture. Compare it to the pink animal crossing tee and you'll see what I mean, they're both on the same hanger.

The buyer is aware that the shirt runs small since she mentioned she usually fits into an xs-small

EBAY Money Back Guarantee (supersedes "no returns" policy) allows customer to return items by claiming "defective, not as description, counterfeit". If you don't accept return (EBAY will do it for you) and let customer keep item. EBAY does not require customers to prove claims.

Why would this buyer want to put the shirt through their child's head in the first place? Is she trying to put on the shirt through her ears, mouth, or nose?

Your remark is confusing. How else would anyone put on a T-shirt other than putting their head through the neck hole, and then their arms through the arm holes?
And the shirt is listed as a women's shirt.

It was humor. Read the OP again: "said the shirt wouldn't go through her head". Typically, one puts one's head through the shirt, not the shirt through one's head.
