Good afternoon
I am looking to sell an expensive item and Ebay needs Signature shipping to be protected in the event of a buyer compliant. However, in the listing, I cannot find Signature shipping in the shipping options. How do I get signature shipping, and is there anything else that I need to be aware of? I looked at Ebay's Policies regarding Signature confirmation but it doesn't tell me where I get Signature shipping. I have not listed the item just yet because I want to verify this prior to selling.

You pay for Signature Confirmation when you buy the shipping label.

You would chose (and pay extra for) signature when you print the shipping label.....it's not a specific shipping choice when listing. It is advisable to mention in the listing that the item will be shipped requiring a signature so buyers KNOW that....... otherwise some may not be home to sign.
That said......and with your low feedback number........I would hesitate to list an expensive item if you haven't sold before....... You will be a scam magnet.....and need to be very careful about selling/shipping.

If you're selling an expensive item you can certain afford to pay for the signature out of your profits. When you print the label there's a check box to select and it's an extra $2.70, probably a little more if you do it at the PO.
Even with the signature you are not protected from buyer complaints. As a new seller with an expensive item you will be targeted by scammers, never text or step outside the boundries of eBay's messaging system.

I have sold an item($9) before and bought a few thing but I am relatively new to selling. Anything I need to look out for?

Look out for selling expensive items on a new account as others have stated. Kind of a rule of thumb sellers have used is, don't sell anything more expensive than the number of feedback you have.
Keep coming here with specific questions, rather than trying to contact eBay. If you are patient, you will get a lot of good answers here. I have been selling for 20 years and always come here 1st with my questions.
