I ask seller to cancel sell said he would buy told me to escalate to eBay how do I do that

Only the seller can cancel. If they don’t cancel, for whatever reason, there is no other option. Contacting eBay will do nothing because only the seller can let you out of your obligation to pay. 

If you use the watch list instead of bidding, you won’t have to retract so many bids.
