I used to sell a lot of items under another eBay name and it was always easy. What can I do to make it easy to add and edit photos?

Change your photo settings to take square photos. Then you won't need to crop.
Did you download the eBay app? You can upload your photos from your phone through the app. Even if you create your listings on the website, you can save them as drafts then upload photos through the app.
Another option is on the website, under the "see photo options" button on the top right above photos, you can enable the option to upload photos from a mobile device. You might find that's particularly helpful if you prefer to do as much as possible on the web.

It should be rather easy (depending on your ability of course) to use any decent cell phone. I upload all of my pictures via cell after i take and edit them on my phone. I don't edit the image itself except for cropping to square. Takes me a couple of minutes (1-2) at most to edit a few pictures per listing. I also suggest using a desktop to make completed draft listings (without photos) that you can just add photos from phone and upload. Just make sure you have adequate lighting.
From Phone....
1. Take pictures
2. Edit to square
3. Remove background if needed
4. Upload to saved draft listing created on desktop/laptop
5. Publish listing
