If I want to list something that gets drop shiped that takes a couple weeks to get to the customer, is there a way to change the shipping time to show that?

If you use the Advanced (not Quick) version of the listing form, you can choose from a variety of handling times, up to 30 days.

In addition/alternative to extending your handling time you can pick a generic shipping service instead of a specific one.
ie: instead of USPS Priority use Standard or Economy (this is only feasible if you are using flat rate shipping rather than calculated).

That's a bad idea, and eBay shouldn't allow "economy shipping" to be chosen without the specific carrier being chosen at the same time. I think that's ever-so-deceptive!
Buyers want to know what shipping method they're getting, whether the seller is dropshipping, and estimated arrival date. Further, buyers may want to avoid the last-mile carriers...

I've used "standard" and "economy" since the first day those options were available (2000/2002?), I don't think I've ever had a single buyer ask what specific service I was going to use. A few buyers have asked if my shipping includes tracking, those were all overseas buyers.
The use or not of standard or economy has no relationship to dropshipping, it does affect the estimated delivery date which is exactly what I want it to do but not many buyers complain when they receive their items faster than they are expecting them.
I have no idea what you mean by "last-mile carriers" at least not in relationship to using standard/economy.
Another reason for not using specific carriers is that the carrier I may choose to use is based on the shipping method that provides the best price and fastest delivery to the buyers specific location. What I use for one buyer may not be the same as another buyer depending on where they are located.
If eBay worked like other sites where buyers don't see the shipping service/carrier until they get to checkout and provide a shipping address I would be able to easily determine the exact service to be used but since buyers on eBay can see this info before they buy or even add to cart I prefer to use generic descriptors.

You won't see that if you use calculated shipping.

The shipping section is set up with either a flat rate for shipping, or calculated shipping. If you select calculated, then you also must select specific services so the calculator can work. But if you choose to offer a flat price (including zero) then you can choose generic "economy" or "standard" in the drop-down list.

What you want to do is order it, have it shipped to YOU. Then inspect it and take your own pictures. THEN list it here.
