How to get the number of unlisted items to reflect the accurate number

From a previous question someone said just click on the word 
"unsold" and we'll see none there to relist. The question is why does it show 16 when there are none to relist and how do we get the number 16 to be 0 which is the correct number of unlisted items.

Those numbers are  the actual number of sold and unsold items during whatever the display period for your pages is (in my case the last 60 days).

You appear to be confusing unsold with not yet relisted.

UNSOLD is where I go when I need to relist my unsold listings.

In your screen shot, if you were to relist those 16 items, after the relist you should see 0 UNSOLD.
